The remains of Dean Paul Martin, the oldest son of the entertainer Dean Martin, and another flier were found Wednesday by rescue workers in the San Bernardino Mountains where their fighter plane was lost six days ago, the Air National Guard said.

''Capt. Dean Paul Martin and Capt. Ramon Ortiz perished instantly at the time of impact,'' said Sgt. Carolyn Hamilton, an Air National Guard spokeswoman who read from a statement.

Today rescue crews airlifted the remains of the two off the mountain.

Mr. Martin, 35 years old, and Mr. Ortiz, 39, of Las Vegas, Nev., were in one of three F4-C Phantom jets that left March Air Force Base near here and were flying maneuvers near the San Bernardino mountain range Saturday afternoon.

Officials said the jet piloted by Mr. Martin plunged nearly 4,000 feet from its last radar altitude reading of 9,300 feet and hit the side of the mountain at about 400 miles an hour.

The wreckage was found on the east side of Wood Canyon, east of Potrero Canyon in Riverside County.

Dean Paul Martin, the oldest of Dean Martin's three children by a former wife, Jeanne, had been an athlete, a television performer and a musician.

He most recently appeared in NBC-TV's ''Misfits of Science,'' and also starred with Ali MacGraw in the 1979 tennis movie ''Players.''

The younger Mr. Martin started his show business career when he was 14, forming the rock band Dino, Desi and Billy with Desi Arnaz Jr., the son of Lucille Ball and Desi Arnaz, and a neighbor, Billy Hinsche.

Mr. Martin was formerly married to the Olympic skating champion Dorothy Hamill and to the actress Olivia Hussey. His 12-year-old son, Alexander, from his marriage to Miss Hussey, accompanied Mr. Martin to March Air Force Base on Saturday.

Mr. Martin is also survived by his father; his mother, Jeanne, and six brothers and sisters. Funeral services were incomplete.
